Guernsey Catering Skills

CLIENT: Guernsey Educational Authority
TOTAL PROJECT VALUE: £25m (FF&E element £0.8m)

PROJECT DESCRIPTION:

This project was a new build for the Island’s vocational training college. It needs to deal with students of a very mixed ability. One part of the scheme is to provide a catering kitchen for the college which also doubles as a teaching kitchen.

THE RAD SCOPE & BRIEF:

To design and coordinate the furniture and equipment. The brief was to provide options for the catering spaces having understood the legacy equipment available, the need to move to electric and the occupancies proposed for the spaces.

OUR SOLUTION:

We produced concept designs of each type of space for staff to engage with based on the desired teaching occupancies. The staff were then able to comment and impact on the design until we reached a budgeted solution that met their brief, legacy solutions and aspirations for a national state-of-the-art training centre. It is unusual to mix the main kitchen with teaching facilities.

HOW WE MADE A DIFFERENCE:

  • We separated the store demands between the two functions to prevent any mistakes in managing the core dining facilities and food handling standards for that area.
  • Brought our knowledge of equipment, safe working zones and supply chain expertise to create the maximum space utilisation with the best solution for the
  • Delivered workable ideas on space zoning that enabled the university to exceed all expectations.
  • Created a safe but inspiring environment
  • Advised on extract demands and other complex service
